The Nikkei cuisine: Japan meets Peru

Issei is a concept restaurant that builds on the historical connection between Japanese and Peruvian cuisine. Experience the Nikkei cuisine, which is a fusion of natural flavors, spices, and ingredients from both countries' culinary traditions and cultures.

The cuisine is characterized by the use of fresh fish. For example, try salmon tataki, ceviche, tuna tiradito with seaweed, or dishes with various types of shellfish. Grilling, frying, and roasting are all used in the kitchen. As a side dish, green vegetables such as zucchini, bok choy, yuca fritters, and Japanese croquettes with black quinoa are served.

There are plenty of Japanese culinary skills from the dedicated chefs.

The history behind

The Nikkei cuisine has been around for over 125 years. During a voyage from Japan to Peru in 1899, several hundred people on board brought family recipes. Recipes that were cooked using Peruvian ingredients.

The union of the two countries can be seen in several aspects. Issei's setting also combines Japanese design and colors with Peruvian geo-architecture. The result is a free and natural space with simple forms and good harmony.
